SUNDRIED TOMATO & TAHINI SALAD

Ingredients

  • 1 ¾ cup (130g) lentils, drained
  • 1 cup (70g) sun-dried tomatoes, drained
  • ½ cup (80g) artichoke, drained
  • 1 cup (225g) spinach
  • ½ cucumber, chopped
  • 2 tbsp. tahini
  • 2 tsp. apple cider vinegar
  • 1 tbsp. tamari or soy sauce
  • 1 tsp. honey

Prepare the vegetables and place them in a large bowl.

Mix together the dressing ingredients (tahini, vinegar, tamari & honey), season with salt and pepper, and drizzle over the salad. Mix well, divide onto two plates and serve.
