Ingredients

  • 1 cup (125g) roasted peanuts, unsalted
  • 2 cloves garlic, chopped
  • 1 tsp. tamari
  • 2 tsp. sesame oil
  • 2 tbsp. coconut sugar
  • 2 tbsp. fish sauce
  • 2 tbsp. lime juice
  • ⅛ tsp. cayenne pepper
  • ½ cup (120ml) coconut milk, canned

  1. Place the peanuts into a food processor and pulse until finely ground. Add the remaining ingredients, and process until well combined.
  2. Transfer to a bowl, then taste and adjust the seasoning by adding more fish sauce, lime juice and cayenne pepper. If necessary, thin the sauce with a little water to reach the desired consistency.
