Quick Pickled Red Onions

Ingredients
- 2 red onions, thinly slicedÂ
- ½ cup (120ml) apple cider vinegarÂ
- ½ cup (120ml) waterÂ
- Âľ tsp. saltÂ
- 2 tbsp. honey Â
- 2 tsp. ground cumin
- 1 clove garlic, cut in halfÂ
- 2 bay leaves
- Place the onion in a small pot along with the vinegar, water, salt, honey and cumin. Place the pot on the stove over a medium heat and bring to a simmer. Stirring the mixture, simmer for 1 minute then remove from the stove and set aside to cool.Â
- Place the onions and liquid into a jar, add in the garlic and bay leaves and fit with a lid. Store the pickles in the refrigerator for up to 2 weeks.
