Pea and Ham Soup

Ingredients

  • 1 tbsp. butter
  • 1 onion, chopped
  • 1 potato, peeled, diced
  • 4 cups (950ml) vegetable broth
  • 1 lb. (450g) green peas, frozen
  • 1 lb. (450g) ham, thickly sliced

  1. Heat the butter in a pot over medium-high heat. Add the onion and cook until softened.
  2. Next add in the potato and stir, then pour in the broth. Simmer until softened, around 10 minutes.
  3. Finally add in the frozen peas and bring back to the boil. Cook for a few more of minutes.
  4. Remove from the heat and blend until smooth, using a hand mixer. Stir in the diced ham and serve.
