Lime and Cranberry Energy Balls

Ingredients

  • ⅔ cup (80g) cranberries, dried, unsweetened 
  • 1 cup (80g) desiccated coconut 
  • 1 cup (95g) almond meal 
  • 2 tbsp. coconut oil 
  • 1 tbsp. honey 
  • 1 ½ tsp. lime zest 
  • 1 tbsp. lime juice

  1. Place the cranberries into a food processor or high-speed blender and process until finely chopped.  
  2. Add the remaining ingredients and blitz until the mixture comes together. Roll into 12 balls.  
  3. Store the balls in an airtight container in the fridge for up to 2 weeks.
