Green Curry Chicken Salad

Ingredients
For the sauce:Â
- 1 cup (240g) Greek yogurtÂ
- 2 tbsp. Thai green curry pasteÂ
- 4 tbsp. fresh cilantro, choppedÂ
- 1 lime, juicedÂ
- 1 tsp. chilli powderÂ
- 1 tsp. ground turmericÂ
- ½ tsp. paprikaÂ
- 1 tbsp. honeyÂ
- saltÂ
For the salad:Â
- 4 servings simple shredded chicken
- 1 cup (145g) green peasÂ
- 1 red bell pepper, choppedÂ
- ½ red onion, dicedÂ
- salt & pepper
- In a bowl, mix together all the ingredients for the sauce, stir well to combine and set aside until needed. Â
- In a separate bowl, combine the ingredients for the salad and season to taste with salt and pepper. Add the sauce to the salad and mix until well combined.Â
- Divide the salad between 4 bowls and serve with fresh salad greens or toast (not included within nutritional breakdown).
