Easy Pumpkin Turkey Chilli

Ingredients

  • 2 tbsp. olive oil
  • 3 cloves garlic, minced
  • 1 red onion, diced
  • 1 lb. (450g) ground turkey, lean
  • 14 oz. (400g) pumpkin puree
  • 2x 14 oz. (400g) cans chopped tomatoes
  • 3 tbsp. tomato paste
  • 1 tbsp. coconut sugar
  • ½ cup (120ml) chicken stock
  • 1 tbsp. Sriracha sauce
  • 2 tbsp. chilli powder
  • 1 tsp. smoked paprika
  • salt & pepper to taste

  1. Heat the olive oil in a large pot over a medium/high heat. Add the garlic and onion and sauté for 2-3 minutes until fragrant.
  2. Add the ground turkey and cook for a further 5-6 until the turkey has browned. Add the remaining ingredients to the pot and mix until well combined. Cover the pot, bring to a boil, then lower the heat and simmer gently for 10 minutes.
  3. Taste for seasoning and serve immediately.
