Place the coriander, jalapeño pepper, minced garlic, lime juice, Greek yogurt, salt, and pepper into a high-speed blender or food processor, and blend until smooth, around 30 seconds.Â
Add the olive oil, and blend again for a few more seconds. Adjust the seasoning if necessary. Â Â
