Cheeseburger Omelet

Ingredients
- 2 eggs
- 4 egg whites
- 4 oz. (115g) lean ground (minced) beef (5% fat)
- 1 tomato, sliced
- 1/4 cup (30g) cheddar cheese
- 2 pickled gherkin (dill pickle), sliced
- 2 tbsp. tomato ketchup
- salt & pepper
- In a bowl, whisk together the eggs and egg whites. Heat a dry non-stick skillet/frying pan over a medium heat.
- Add the eggs to the pan and cover, cooking for 5-6 minutes or until the eggs are done to your liking, remove from the heat.
- Heat another pan over a medium-high heat and cook the ground beef, season with salt and pepper. Once beef is cooked through, spread over the eggs in the other pan.
- Place the pan back over the heat and top with sliced tomato and pickle, fold and sprinkle with cheese. Cook until the cheese has melted.
- Serve immediately with ketchup.
